As a working mom, I’m always looking for quick and easy meal ideas. There are many days when I’m just too tired to spend a lot of time in the kitchen cooking and then cleaning up from dinner. That’s why I was so excited to find this recipe in my grandma’s recipe box. As soon as I read it, I realized this recipe was perfect for busy moms like me: there are only 5 ingredients, and it’s ready in 30 minutes or less.
An added bonus is that your kids can join in making this recipe! I wish I had got some pictures of my kiddos standing at the counter helping, but I was too busy having a panic attack. Real talk. You see, sometimes I get so fixated on perfection that I miss the beauty of imperfect moments – like freaking out about my (almost) 4-year-old messing up the barbecups instead of enjoying the activity with my family. However, my sweet husband gently and graciously reminded me to be present in the moment and stop worrying about everything. I thank God every day for that man, but especially so when he can talk me back from the ledge of the Grand Anxiety Canyon.
As I was saying, this recipe is very kid-friendly. My toddlers loved squishing and stretching the doughy biscuits – and snacking on some cheese along the way. Even my husband jumped in to help. Also, not only is this recipe a fun cooking activity to do with your kids, it’s also something they will actually eat. My kids are notorious for never eating the good stuff I cook for them – but they both made happy plates after having barbecups. That makes this recipe a win in my playbook.

- 3/4 lb ground beef (I used 1 lb)
- 1/2 cup BBQ sauce of choice
- Minced onion (optional)
- 2 tablespoons brown sugar
- 1-2 tubes of refrigerator biscuits
- Shredded cheese
Brown ground beef and drain. Add BBQ sauce, brown sugar, and minced onion (if desired; you can also add it to the meat while you’re browning it, which is what I did).
Take biscuits and press individual biscuits into ungreased muffin cup, making sure dough goes up to the edge of muffin cup. (I combined 2 biscuits per cup because I was having trouble getting the biscuits to the edge of the muffin cup. That’s why I recommended 1-2 tubes of biscuits). Spoon meat mixture into muffin cups and sprinkle with shredded cheese. Bake at 400 degrees for 10-12 minutes.
